This Week's Fit Plan

Roo makes it fun.
Incorporating fitness into my life and schedule hasn't always been easy. I struggled with finding time, making time, and committing time to my fitness. I would end up telling myself on Sunday evening, in preparation for the week ahead "Be at gym by 5, do this workout, burn this many calories, be home by this time". But that didn't work for me.

What works for me is creating something new and different each week.
So I do.

You can't (and shouldn't) do the same thing for weeks and weeks on end. Not only does it get boring, it's unrealistic, and it usually keeps you from progressing and from staying enthusiastic about your fitness goals.

So I'm going to share what I do each week. I was hoping to get a link widget so others could post their exercise plans, but I haven't been able to get my hands on one just yet.

Eating Well on Sixty | 4/1-4/7

I could easily spend an entire paycheck at the store each week. Sometimes I make excuses to go to Whole Foods when I really don't need to. Luckily, Brett is quite good at knowing when we really do need to, and when I'm just having WF hallucinations. (That alone probably saves us close to $1000 each year). But now that new school bills are looming in the very near future, it's time to get serious. And since I couldn't find many $60 meal plans that were healthy, delicious and vegetarian, I decided that I would create my own. Armed with three $20 bills, we will eat. And we will eat well.

Okay. So. I spent $62.35. But that's including some sponges. So. We'll just go ahead and say $60.

This week, this is what we're eating:

Breakfast
-oatmeal with warm apples and walnuts
-egg, toast, fruit
-toast with peanut butter, banana, agave
-egg white scramble with tomato and  basil, toast
Lunches

Most days, leftovers from dinner will be eaten the next day as lunch. Other days, these are what I rotate in:
-baby green salad with green peppers, tofu
-tofurkey deli slices (buy on sale and freeze! this is a treat!) on homemade rustic bread, fruit, slice of cheese, carrots or celery

Friday
-Pizza on homemade dough, salad

Saturday
-Quinoa Bean Salad, Rustic Bread, and salad

Sunday
-Tofu/Spaghetti Squash Burgers on rustic bread with broccoli slaw, sweet potato fries, and salad

Recipe coming. Wednesday. Be there.

Monday
-Roasted Veggie Pasta and salad

Tuesday
-Quesadilla with fresh salsa and bean salad *Big hit. We're bringing it back this week. Same time, same place ;) *

Wednesday
-TAO (tomato/avocado/onion) Sandwiches on whole wheat rustic bread with veggie tofu spread, homemade (baked) potato 'chips', salad

Thursday
-Sweet Chili Sauce Seitan with Roasted Veggies, served over brown rice

Snacks/Treats

-homemade cinnamon raisin swirl bread with tea
-greek yogurt with veggie slices
-hard boiled egg with veggies
-grapes with cheese

*Last weeks' Lentil Burgers tasted delicious, but didn't hold up so well when they were formed into patties. So, we're trying to tweak the recipe before I share it on here! :) *
